- Create and oversee daily operating procedures for execution of sushi i.e., food cost, inventory control, portion control, quality of food, speed in service - Ensure the items prepared are always of the highest quality possible - Expertly cut, slice, and fill different types of fish - Control the quality and quantity of the ingredients, suggest modifications, or other ingredients to be used which may yield a better profitability

- At least 2 years of experience - Good knowledge of various sushi types and sushi rolling techniques preferred - Ability to work in a team environment
